Heat a large cast iron skillet to medium heat & fry the potatoes in the oil for about 5 minutes. Salt & pepper and cover. Cook for about 20 min, or until the potatoes are cooked through, stirring every 5 minutes.
While the potatoes cook, cube the bacon & slice the green onions.
Add the bacon to the potatoes and cook for about 10 minutes, until the bacon is crispy.
Turn off the heat & stir in the green onions. Plate the potatoes, top with cheese & set aside.
In the same pan as the potatoes, crack the eggs & fry to your liking. Top the hash with the eggs & serve.
