Instructions
  1. Cook bacon in a large pan until crispy. Set aside and drain pan, leaving the fond and some of the bacon fat.
  2. While the bacon cooks, dice the onion and bell pepper.
  3. Add the corn, bell pepper, and onion to the pan. Cook over medium high heat for about 8 minutes or until the vegetables are soft.
  4. Reduce heat and add cream cheese and milk. Mix until the cheese is melted then stir in the chopped green onions and salt & pepper to taste.
  5. Move the mixture to a serving dish & top with the crispy bacon.
