Instructions
  1. Trim the cauliflower of its stem. Put a cup of water and the steamer rack into your Instant Pot. Place the head of cauliflower on the rack. Set the Instant Pot to manual high pressure for 4 minutes.
  2. While the cauliflower steams, place the goat cheese, butter, and juice of the lemon in a food processor or blender.
  3. When the cauliflower is done, manually quick-release the pressure. Very carefully remove the cauliflower with tongs and place in the food processor with the other ingredients.
  4. Blend the mixture until smooth and salt to taste.
Recipe Notes

If you don’t have an instant pot, you can steam the cauliflower in the microwave. Or, roast in the oven and add some chicken broth to thin the mash.
