🍍 Pineapple Margarita? yes, please.

It’s still very much spring in Denver and I am ready for some consistent, warm weather. This pineapple margarita is perfect for channeling some warm, island vibes whenever you need them.

Tequila is my go-to drink and, more recently, I’ve gotten interested in the history & process of making tequila. After trying more traditional tequilas, I definitely have some new favorites. For this drink, I really like LALO, a newer brand that was started by the grandson of Don Julio GonzΓ‘lez.

This marg is a little more exciting than my standard tequila, lime, & Mineragua combo. And a little more tame than Chase’s Perfect Margarita. I like a blanco tequila for this one and, for a double dose of pineapple, I use Patron’s pineapple liquor and Pineapple Jarritos. A non-negotiable for me is fresh squeezed lime juice. Even the organic, real, bottled stuff can’t compare to fresh.Β 

Another key to a good cocktail is shaking it! This not only mixes the ingredients but also chills them to a lower temp than you’d get with stirring, dilutes the mixture (this isn’t a bad thing), and aerates it to create a smoother mouth feel. πŸ€“

To get going, mix two tablespoons of Tajin and a teaspoon of granulated sugar together on a small plate. Grab a glass and rub the rim with a lime wedge. Dip the rim of the glass into the Tajin mixture and shake off any excess. Add ice to the glass and set aside.

In a shaker filled with ice, add 1.5oz of some good tequila, 1/2 oz pineapple liquor, and 1/2 oz fresh squeezed lime juice. Shake it up for a good 15 seconds then strain into your prepped glass. We don’t want that ice that’s in the shaker anymore! Top with about 4 oz of Pineapple Jarritos and garnish with a lime wedge & fresh pineapple.Β

Instructions
  1. Mix Tajin and sugar on a small plate. Rub the rim of a cocktail glass and dip into the mixture to rim the glass, shaking off any excess. Add ice to the glass and set aside.
  2. In a shaker filled with ice, add the tequila, pineapple liquor, and lime juice. Shake for 15 seconds and then strain into the prepped glass.
  3. Top the glass with the pineapple Jarritos and garnish with a lime wedge and pineapple chunk. Enjoy!
