Lemon & Goat Cheese Mashed Cauliflower

While I was trying to perfect those Short Ribs, I needed a solid sidekick. This was one of those, look in the fridge & come up with something kind of dishes. It turned out great on the first attempt! This Lemon & Goat Cheese Mashed Cauliflower is a creamy & tangy contrast to any rich protein.

The Instant Pot is what makes this (and so many other) recipes quick and easy. Simply trim a head of cauliflower and steam it for 4 minutes.

While it’s getting all nice & soft, measure your goat cheese & butter and juice a lemon into your food process or blender. (I like this one from Ninja. It’s like a 5 in one machine!)

Once the time is up on the Instant Pot, do a manual quick release and carefully place the cauliflower in the blender with the goat cheese, butter, & lemon. Blend the mixture until smooth & well combined. If it’s too thick, add a splash of chicken broth to help smooth it out. Salt to taste and serve with a hearty protein.

Instructions
  1. Trim the cauliflower of its stem. Put a cup of water and the steamer rack into your Instant Pot. Place the head of cauliflower on the rack. Set the Instant Pot to manual high pressure for 4 minutes.
  2. While the cauliflower steams, place the goat cheese, butter, and juice of the lemon in a food processor or blender.
  3. When the cauliflower is done, manually quick-release the pressure. Very carefully remove the cauliflower with tongs and place in the food processor with the other ingredients.
  4. Blend the mixture until smooth and salt to taste.
Recipe Notes

If you don't have an instant pot, you can steam the cauliflower in the microwave. Or, roast in the oven and add some chicken broth to thin the mash.
