Game Day Dip
It’s game day! Which means you’re either hyped up to: 1) root on your favorite team 2) root against your least favorite team or 3) have a great excuse to eat your heart out with friends. This year I fall into group three, so enter: Game Day Dip!
Note, you may also hear this dip referred to as “Kathleen Dip” giving homage to one of the best roommates ever who brought this dip into my life. She & this dip are pretty much the best! Did I mention it takes about 5 minutes to make?
To start, soften a block of cream cheese and spread evenly in a shallow dish. The sole purpose of this corningware may or may not be to hold this dip.
Drain and rinse a can of black beans & arrange on top of the cream cheese.
Drain 2 cans of Ro-Tel & spread that out on top of the beans. I used one hot & one regular can.
Sprinkle shredded cheese on top.
Microwave on high for about 3 minutes or until the cheese is all melted. Serve with your favorite tortilla chips!

- 8 oz cream cheese
- 2 cans rotel
- 1 can black beans
- 3/4 cup shredded cheese
- tortilla chips
- Evenly spread softened cream cheese in a shallow dish or pie pan.
- Drain and rinse black beans. Evenly spread on top of cream cheese.
- Drain rotel and layer on top of the beans & cream cheese.
- Sprinkle shredded cheese on top & heat in microwave for about 3 minutes, or until cheese is melted.
- Serve with tortilla chips.
