Fruit Tartlets

Are you ready for the most simple, crowd pleasing dessert of the summer? These Fruit Tartlets are semi-homemade and fully addictive. Seriously, they are perfect for Fourth of July celebrations, Memorial Day shindigs, and other spontaneous summer BBQs.

They’re so simple too! I threw these together as a last minute treat for the humans at a puppy birthday party we were headed to. I was craving fruit pizza but really didn’t have the time to whip up, chill, cook, and cool a full crust. I contemplated pre-made dough then, when digging out a sheet pan, I found my mini muffin tin. 💥Boom. Break & bake sugar cookie dough in the mini muffin tin would make perfect little crusts to fill with cream cheese goodness & top with berries. So festive!

It starts with the cookie crusts: drop one cookie in each section of a greased mini muffin tin. Bake as directed on the instructions & let cool in the tin. The cookies will puff up then fall, creating a cup full of potential.

While the cookies cool, cream the sugar, vanilla, and half of the water with the softened cream cheese. Add more water as needed to create your preferred icing consistency. (Too much water? Add a tad more powdered sugar!)

Once the cookies are cooled, twist out of the muffin tin. You may need to use a spoon or butter knife to coax them out. Fill each cup with the cream cheese mixture and top with berries!

Instructions
  1. Place each cookie in a section of a mini muffin tin & bake as directed on the package. Let cool fully before removing from the tin. The cookies will fall in the middle creating the perfect little cups.
  2. While the tartlets cool, cream the sugar with the cream cheese. Add the vanilla and water & mix until smooth.
  3. Once cool, fill each tartlet with some of the cream cheese mixture and top with berries.
