Breakfast Hash

breakfast hashPotatoes are the best vegetable.  You could say we’re on a health kick having breakfast hash three times in one week.

& bacon? that’s paleo right?

Perfect.

To start, put on a pot of coffee. Knifes are no good in the hands of the uncaffenated.

Now, cube up some potatoes. Toss them in a cast iron skillet with a little oil, salt & pepper. (I like avocado oil for high temp cooking like this.) Let them talk over medium heat for a few then cover and cook for 20-25 minutes, stirring every 5 or so.

While the potatoes cook, cut up your bacon & onions. When the potatoes are soft, toss in the bacon. Cook for about 10 min, until the bacon is nice & crispy.

Stir in the onions & top with cheese to get all melty and set aside. (skip the cheese if you actually want this to be paleo)

Cook the eggs to your preference but note: a sexy, runny yolk is more photogenic.

Top the potatoes with the eggs and serve with some Cholula.

Instructions
  1. Cut the potatoes into half inch cubes.
  2. Heat a large cast iron skillet to medium heat & fry the potatoes in the oil for about 5 minutes. Salt & pepper and cover. Cook for about 20 min, or until the potatoes are cooked through, stirring every 5 minutes.
  3. While the potatoes cook, cube the bacon & slice the green onions.
  4. Add the bacon to the potatoes and cook for about 10 minutes, until the bacon is crispy.
  5. Turn off the heat & stir in the green onions. Plate the potatoes, top with cheese & set aside.
  6. In the same pan as the potatoes, crack the eggs & fry to your liking. Top the hash with the eggs & serve.
